A few years ago, when we were moving to Utah, we stayed with my niece, Sonja, and her wonderful family while we looked for a house. Sonja is a wonderful cook, and a joy to be around. While we were there, cold season came around, & Sonja made this yummy soup for me. Note her addition at the bottom of the recipe!
Grandma's Homemade Chicken Noodle Soup

Serves 12
3 Tablespoons olive oil
2 onions, chopped
4 stalks celery, chopped
1 rotisserie chicken, skinned, boned and shredded
3-4 quarts of chicken broth
4 large carrots, peeled and chopped
1 package of frozen Grandmas Egg Noodles
Dash of Cayenne pepper
Salt and pepper to taste
1 Tablespoon of thyme
In a large soup pot, heat oil.
Add garlic, onion and celery and sauté' 10 minutes
Simmer until vegetables are tender about 20 minutes
Defrost frozen noodles according to package direction. Add noodles to broth and simmer for 10-12 minutes or until done.
Add cayenne pepper and salt/pepper to taste.
Nutrition Information per 2 cup serving: 200 calories, 16 gm Carbohydrate, 13 grams protein, 7 grams Fat.

When I make it, I usually just use a couple chicken breasts that I chop up & stir fry with the onion & celery. You might want to add a bit more spice, but taste it first!
