Sweet & Sour Meatballs

This is an old family favorite - I've had it so long, I can't remember where I got it, but I find it in my oldest scrap-cook-book, which means I've had it since we got married!

Sweet & Sour Meatballs


**Set Rice to cook.

1 Egg
1 C Bread crumbs / Oatmeal
2 T chopped Onion
2 T Milk
¾ t Salt
1 lb Hamburger

Mix well.  Shape into 24 balls.  Brown in 2 T shortening in a skillet. Drain fat, remove to a warm place.  Bake in 400* oven for 25 minutes. Blot up fats & add sauce ingredients:

8 ½ pz Pineapple tidbits
¼ C Brown Sugar
2 T Cornstarch
½ C Water
1/8 C Vinegar
1 t Soy Sauce
1 (6 oz) can Pineapple Juice

Drain Pineapple, reserving syrup.  In medium saucepan, combine syrup with remaining ingredients.  Cook & stir over low heat until thick & bubbly.  Add Pineapple.

Optional:
5 oz. Slice Water Chestnuts
1 Green Pepper, sliced

Add the sauce mixture to the meatballs.  Heat to boiling.


Serve over hot rice.
