Skillet Pizza

As we search for low-carb foods that fill our stomachs as well as our hearts, we shun such things as tofu, braised collard greens, and other unpronouncable strange "vegetables" that seem to be the latest fad of whatever clean-eating guru you tend to follow.  I have a family of picky eaters; and have learned to cook foods that we will all eat & enjoy.  Sometimes, it takes a while to find the happy balance - and sometimes we have an awesome discovery!

Skillet Pizza

While bread can be a part of your Skillet Pizza, it is neither necessary nor required.  Once you get past the assumption that you need bread to make it pizza, all sorts of options open up to you!

We bought small skillets at Walmart - they cost about $10 each.

 After you remove the labels, wash, oil, & get ready for awesomeness!  Sometimes, you can find used skillets at thrift stores - often they are dirty, rusty, &/or banged up a bit - no worries - you can go  here to find instructions for care of your pans.

Next, gather all the good stuff you love on a pizza.  The men in our house prefer to stick with mostly meats, but I love all the vegetables.  The advantage of this meal is that everyone gets to make their own custom pizza - everyone gets exactly what they like!
 All of the meat should be cooked thoroughly before assembly.  You'll note that some is freshly cooked, some is packaged, & some come from the refrigerator.

Our usual fare includes pepperoni, Italian sausage, sliced ham, & bacon.

Likewise with the vegetables - some are freshly chopped, some are bought already shredded, & a few cans or bottles have been opened to help with the variety.  Use whatever you love, & try a few new things - you'll be surprised at the variety of things that taste good in this!

Some of the vegetables I like are broccoli, carrot, onion, marinated artichoke hearts, tomato, spinach, pineapple, zucchini, & summer squash.

Of course, don't forget spaghetti sauce & mozzarella cheese!

Depending on how many people you are trying to feed at once, & how big your oven is, you may have to bake these in shifts.  This might be good for a busy family coming & going all day with their crazy schedules!

Bake at 350* for 15 to 20 minutes or until your cheese is browned.


Each Skillet Pizza will turn out a little different, but they are all wonderful!

As you enjoy them, be careful not to touch the HOT pan!  Of course, you can slide the whole thing off onto a plate, but we prefer to eat right out of the skillet!   Also, be sure to set your hot pan on a hot pad so you don't ruin your table!
